Festive Favourites: Day Four-Meringue

We're half way through the week!
With four more days to go until the big day, I hope you're all getting your presents wrapped, food bought and cards written. Christmas Day will soon be upon us!

So another day means another Festive Favourite recipe, and today's bake doesn't let down...today is meringue day! This recipe is a great one to get the kids involved with, and comes from British Lion Eggs...Christmas Meringue Snowmen!

This recipe makes 5 snowmen, so if you want to make some more (which you probably will), just double the recipe!

Ingredients:
2 egg whites
100g caster sugar
75g milk chocolate chips
5 (10cm) lengths of ribbon

Method:
Preheat your oven to 140C.
Grease a large baking tray and line with non-stick baking paper.
Place the egg whites in a large, clean bowl and use an electric whisk to whisk them until they are thick, white and stiff peaks form. You should be able to tip the bowl upside down and the egg whites should remain in place.
Add about a third of the sugar and whisk again until the egg whites are stiff and shiny. Add the sugar in two more batches whisking in between each addition.
When all the sugar has been whisked in, the egg whites will be really stiff, white and shiny.
Use a dessertspoon to place 5 round heaps of meringue, (about 6cm in diameter) well apart on the baking sheets-these will become the bodies.
Then use a teaspoon to place 5 smaller round heaps, (about 4cm in diameter) of meringue on the baking sheet to make the heads.
Bake for about 1 hour or until the base of the meringues feel dry and crisp. Leave to cool.
To Decorate:
Save 10 chocolate drops for the eyes.
Place the remainder in a small heatproof bowl and stand it over a small pan of hot water, stir until the chocolate has melted.
Use a small paint brush to paint a blob of chocolate on top of a body and place a head on top.
Next wrap the ribbon around the neck of the snowman, gluing the ends onto the snowman with chocolate.
Finally add two eyes onto each snowman with melted chocolate and use the paint brush to paint a chocolate smile onto each face.
Dust with icing sugar.

Meringues are so simple to make, and allow for so much personalisation and experimentation, it's a great recipe to make with younger kids, as they can really get involved.
