Mini Granola Bites
Ever feel like you just need something to tide you over in that gap between meals? Something that isn't full of sugar or fat, but will keep you filled up until you finish work or school. Well fear not, I have the perfect solution!
Homemade granola can be flavoured with whatever you like, whether it be dried fruit such as cranberries or raisins, or roasted and toasted nuts, or go wild and mix them all together, why not add some seeds in too?
Low in sugar, and high in protein, these granola bites will fill you up until your next meal.
Ingredients
2 cups of porridge oats
1/2 cup of desiccated coconut
1/2 cup of honey
2 tbsps. creamy peanut butter
1 tsp vanilla essence
Pinch of salt
Optional Ingredients
1 handful of mixed nuts (roughly chopped)
1 handful of dried fruit (raisins/sultanas/currants/cranberries/blueberries/goji berries *make sure they are unsweetened fruits, so stay away from glace cherries, mixed peel etc.)
1 handful mixed seeds
You can mix and match these as you like, just make sure to alter the quantities.
Method
Pre heat the oven to 160C.
Grease a 9-inch square baking dish.
Mix together the oats and coconut, and spread onto the dish. Toast in the oven until browned, about 10 minutes, and transfer to a mixing bowl.
Mix together the honey, peanut butter, vanilla essence and salt in a saucepan over a low heat.
Pour this honey mixture into the bowl of oats and coconut, and add which ever additional ingredients you wish to include.
Mix together well, and press into the re-greased baking dish, and bake in the oven for approximately 15 minutes (check after 10), until golden brown.
Leave to cool completely.
Carefully tip out the granola square onto a chopping board. Don't worry if it breaks, as you'll be chopping it into small chunks anyway.
Chop into small chunks, I cut into 1 inch squares, but it doesn't have to be perfect.
If you end up with some crumbs and really small chunks, these can be eaten too! Serve with yoghurt and some fresh berries or grapes for a yummy start to your day, and a lighter version to cereal...perfect for those summer days!
