Chocolate Cookies

It's been a while, hasn't it?
However FC&P is back with a couple of new recipes to get your summer started!
So although it'll soon be Monday, these yummy cookies should help to get your week off to a scrumptious start.
This base recipe is from my baking bible...the Be-Ro book, however you can add whatever flavourings you like! I split my batch into half a dozen chocolate orange, and half a dozen fruit and nut. Two classic chocolate flavours packed into 12 gooey biscuits!
Ingredients
225g self raising flour
100g caster sugar
3tbsp cocoa powder
100g margarine
5tbsp milk
1tsp vanilla essence (if not adding any other flavourings...check out my flavour ideas at the bottom of this post)
Method
Pre-heat your oven to 190C, and grease two baking trays.
Sieve together the flour, sugar and cocoa powder into a mixing bowl. Mix these together until they're combined, and then rub in the margarine.
Add the milk and vanilla essence (leave this out if using other flavourings-you'll add these in a second), and mix using your hands until a dough is formed. It should be slightly sticky!
If you're adding flavouring or extra ingredients, you can add these now, and then mix together.
*If using a wet flavouring such as orange juice, you'll need to add a little more flour, just keep adding until you've reached the same consistency as before.*
Separate the dough into 12 balls, and flatten each one onto the baking trays. These cookies don't spread too much, so you can put them slightly closer together than you normally would.
Bake for 8-10 minutes, or until they form a hard crust. They'll still be soft on the inside!
Transfer from your baking tray onto a cooling rack, and leave to cool completely. Or if you can't wait, enjoy with a nice glass of cool milk!
