Jam and Coconut Squares-bite size heaven!

Sometimes you just want a little bite to get you through the day, and I know for most of us that's usually a sweet treat! These jam and coconut squares hit the spot just right! They're full of flavour and each bite has texture upon texture-it's a flavour explosion! Next time you fancy a sweet treat to keep you going, take a whack at these yummy snacks! Simple and scrummy!

Ingredients:
6oz self raising flour
6oz butter
6oz caster sugar
3 eggs
1 pot of jam (choose which ever flavour you like! I'm a big fan of black currant so I used that for this recipe)
500g dedicated coconut

Method:
Preheat the oven to 180 degrees celsius. Line and grease a square cake tin-it doesn't matter too much about the size! You'll be cutting the cake up later anyway. 
Beat together the butter and sugar until it's light and fluffy. It should be cream in colour. Beat in the eggs one at a time, adding a little flour with each addition-this helps to prevent the mix from curdling
Fold in the rest of the flour and give it a good mix until all the mix is combined. 
Pop the mix into your cake tin and bake in the oven for about 20-25 minutes until a skewer inserted comes out clean and is golden brown in colour. Remove from the tin and leave to cool on a wire rack. 

For the next step, loosen up the jam you've chosen. To do this, pop it in a bowl and beat with a spoon. It should become a little runny. Pour the dessicated coconut into a separate bowl. 

Once the cake has cooled, cut the sponge into eighths or quarters. It just depends on how deep your sponge is. If it's quite deep, cut it into quarters and then cut those in half like you would a normal cake. If it's quite shallow and flat, chop it into eight squares instead, this will mean the square is smaller but deeper later. 

To assemble, put a layer of jam on the tops of half of your sponges. Then lay the other pieces of cake on top, just like you would when you fill a normal cake. 
Next, with either a round bladed knife or a pastry brush spread jam around the sides and tops (leave the bottoms bare) of your cake squares. This can be a little messy and time consuming but stick with it! 
Finally, you need to roll the squares in the coconut. Keep on going until they're fully covered, you shouldn't be able to see a lot of jam. Then pop them on a plate until they firm up a little. They should only take 5-10 minutes to do so, so these babies are perfect for last minute party plans!
