Mini Delights: Brandy Apple Pies

So today's recipe is the third and final instalment of our Mini Delights feature, showcasing our 3
favourite recipes from Mini Delights recipe book, which you lovely people can by on Amazon here.

Brandy Apple Pies
These pies can be cooked in advance and frozen when cool, just warm them through when needed! What I love is that Mini Delights tops each individual pie with letters to personalise them, perfect for your next dinner party!


Ingredients
450g cooking apples; quartered, cored, peeled and diced
25g butter, plus a little extra for greasing
55g caster sugar, plus extra for dusting
55g sultanas or raisins
Grated rind of 1 lemon
3 tbsp. brandy or Bourbon
1 quantity of ready-made sweet shortcrust pastry (find the recipe here)
A little plain flour, for dusting
A little milk, to glaze
Whipped cream, to serve

Preheat the oven to 180C and grease 2 mini muffin tins.
Pop the apples in a medium saucepan with the butter, sugar, sultanas and lemon rind. Cook over a gentle heat, stirring occasionally, for 8-10 minutes, or until the apples have just softened (they shouldn't be mushy).
Add the brandy and cook until just bubbling.
Keeping it over the heat, flame with a long match, stand well back and cook for a minute or so, until the flame subsides. Leave the mix to cool.
Roll half the pastry out thinly on a lightly floured surface. Using a fluted 6cm scone cutter, stamp out 24 circles, and press them gently into the prepared tins.
Brush the tops of the pie cases with milk, then spoon the filling in, doming it up high in the centres.
Roll the reserved pastry out thinly on a lightly floured surface. Stamp out another 24 circles and arrange on top of the pies, pressing the edges well together to seal.  Brush with milk.
Shape tiny ropes from the remaining pastry into the initials of your guests or your family and press onto the pie tops brushing with a little extra milk. Sprinkle the tops with sugar.
Bake in the pre-heated oven for 15 minutes, or until golden.
Leave to cool for 10 minutes before loosening with a round-bladed knife and transferring to a wire rack.
Serve warm or cold, sprinkled with a little extra sugar, with spoonful's of whipped cream.
