Tropical Pavlova

Would you believe its February already?
I hope January was kind to you all, but if you're anything like me, I bet you're kinda glad it's over with. So the days are getting ever so slightly longer, the weather is getting ever so slightly better and winter is very nearly over.

Today's recipe will make you feel like summer has arrived 5 months early: Tropical Pavlova. It's packed with flavour, and makes a great dessert on a Sunday night when you're curled up on the sofa. The meringue is so quick and easy, you'll be able to get it right every time. And you can top it with any fruit you like, meringue literally goes with anything.


Ingredients
8 large egg whites
Pinch of salt
350g caster sugar
2 tsp. cornflour
Pinch of cream of tartar
1 tsp. white wine vinegar
4 drops vanilla essence
300ml double cream, firmly whipped
Selection of prepared tropical fruit e.g. mango, pineapple, passion fruit.

Method
Preheat your oven to 180C.
Line a baking tray with greaseproof paper and raw a 20cm circle on the paper.
Whisk the egg whites with half the sugar and the salt in a clean bowl until soft peaks form.
Continue beating while adding the remaining sugar until stiff and shiny. Sprinkle over the cornflour, cream of tartar, vinegar and vanilla essence and fold in gently with a metal spoon.
Mould the egg white mix onto the paper within the circle.
Flatten the top and smooth the sides.
Place in the oven and immediately reduce the heat to 150C and cook for 1¼ hours.
Turn off the oven, leave the door slightly ajar and allow to cool completely.
Put the Pavlova meringue base onto a plate, gently push down the meringue in the centre to create a dip, then pile on the cream and dress with the tropical fruit.

How easy is that?
It will literally take you 30 minutes maximum to prepare this dish, and then you can just sit back and relax while it cooks!
