Scrumptious Shortbread

Here we are, it's Monday once again, and FC&P are back with a new recipe for you to feast your eyes upon! Today's bake is for some yummy Vanilla Shortbread rounds, which are topped with a sprinkling of caster sugar! Below will also be some yummy suggestions to make your Shortbread that extra bit special, so be sure to check those out!

Ingredients
125g butter
55g caster sugar (plus a little extra for dusting)
180g plain flour
1 large drop of vanilla essence

To make this dairy free, use Stork Baking Block, which is perfect for biscuits and pastry. You should be able to find this next to the regular Stork tubs in your local supermarket. 

Method
Beat together the butter and caster sugar, until smooth and creamy. This should take 2-3 minutes.
Add in the flour and vanilla essence and mix together thoroughly with your hands until it forms a soft dough.
Roll out into a sausage shape, approximately 1.5 inches thick.
Wrap well in cling film and leave to chill in the fridge for 20-30 minutes, as this will help the dough to keep its shape in the oven.
Remove from the fridge and slice into even sized circles, approximately 1cm thick, I got 15 circles out of my dough!
Pop the rounds onto a greased baking tray.
Pre-heat the oven to 170C, while you leave the dough to sit for a little while. Again, this will help it to keep its shape whilst baking.
Once heated, pop the shortbread into the oven and bake for 8-12 minutes, until lightly golden brown.

Lift onto a cooling wire, and dust generously with caster sugar.

How simple was that? It's a great one to get the kids involved with too, I remember Shortbread was the one thing I wouldn't always make with my mum when I was little...it tastes great too!

As mentioned earlier, I thought I'd share some things you can add to your Shortbread once naked that will really push the boat out and impress your friends!

-Melted chocolate (dipped)
-Jam (you can sandwich two together with a thick gloopy layer of jam)
-Sprinkle with desiccated coconut instead of sugar
-Serve topped with fresh whipped cream and mixed berries
