Taste of Australia: Lamingtons

So today I am off on my travels to Australia and New Zealand! And to celebrate I thought I'd share some yummy 'Taste of...' recipes to get you inspired and to just share some new and exciting flavours from across the globe. So look out over the next couple of weeks for some delicious treats from the other side of the world.

This week sees the turn of Lamingtons, made from squares of sponge cake coated in an outer layer of either chocolate or raspberry sauce and then rolled in desiccated coconut. The thin mixture is absorbed into the cake and left to set, giving it its unique and distinctive texture.

Ingredients
3 eggs
1/2 cup caster sugar
3/4 cup self-raising flour
1/4 cup corn-flour
15g butter
3tbsp hot water

For the icing
3 cups desiccated coconut
2 cups icing sugar
1/3 cup cocoa powder
15g butter
1/2 cup milk


Method
Pre-heat your oven to 180C and grease and line a 18cm x 28cm tin.

Beat the eggs until they're thick and creamy before gradually adding the sugar. Continue to beat until a creamy paste has formed. Fold in the self-raising flour and corn-flour to the butter mix. Then combine the hot water and sugar ina  jug, and add this to the batter and stir well until everything is combined.

Pour the mixture into the prepared tins and bake for 30 minutes. Then let the cake rest in the tin for 5 minutes before turning out onto a cooling wire.

After the sponge has completely cooled, sift the icing sugar and cocoa into a heatproof bowl. Stir in the butter and milk and then continue to stir over a pan of boiling water until the icing is smooth and glossy.

Trim the top and sides of the cake to ensure a smooth surface, before cutting into 16 even pieces.

Holding each piece on a fork, dip each cake into the icing. Hold it over the bowl for a few moments to drain off any excess chocolate and then sprinkle a coating of the coconut before placing back on the cooling wire to set completely.


And there you have it! A yummy Australian delight to warm us Brits up on the coldest of days!
