Easy Like Sunday Morning...
Sunday mornings are usually my main chill time in a busy week, and I usually use that time to try out new recipes and do a bit of experimenting.
Today I decided to try out a new brownie recipe (mainly because I forgot to buy the ingredients for my usual recipe...), which I found on the MumsNet website. It turned out really well, and I'll probably use the recipe again sometime soon; it's got a much more cakey texture than my usual brownie I make, but served warm with a bit of ice cream, and it was to die for! Here's the recipe, and I'd definitely recommend using the MumsNet website to look for recipes, there's so many simple ones that even a shy baker can get to grips with.
Ingredients:
150g butter
150g chocolate
175g caster sugar
2 eggs
1tsp vanilla essence
1/4 tsp salt
100g plain flour
1tbsp drinking chocolate
100g optional fillings/flavouring (or just omit this if you're just after a plain chocolatey brownie!)
Method:
Set the oven to 180 degrees Celsius.
Line a square baking tin with oil and grease-proof paper (a 7inch tin is suggested on the site but I just used the brownie pan I have at home.)
Melt the butter and chocolate together over a pan of boiling water, stirring occasionally. Leave to cool.
Beat together the vanilla essence, sugar, salt and eggs until thick and creamy (it'll be similar to a milkshake or smoothie consistency).
Fold in the flour and the drinking chocolate, and then add the butter and chocolate mix to the egg mixture. Don't beat it, otherwise you'll knock out all the air from whisking the eggs and it'll be as flat as a pancake!
Bake in the oven for 20 minutes, the top should have a crisp layer and the middle should still be gooey. If needed, cook in the oven for an extra 3 minutes until that top layer forms.
Remove from the oven and leave on a cooling wire until completely cool and then remove from the tin. Then simply portion it into whatever sizes you want and serve!
Sadly, it all went before I got chance to take a photo of the finished product, but I can assure you it looks and tastes delicious!
