Chocolate Fudge Cake

So today was a family friend's 60th birthday and my mum asked to make a cake, of any type I wanted, as long as it contained chocolate (because who doesn't love chocolate??). I decided to go for a normal rich chocolate sponge cake filled with a gooey chocolate fudge buttercream. And for someone who hates buttercream, I found it quite delicious (even if I do say so myself). I hope you guys like this just as much as we all do, and always, let me know what you think.


Ingredients:
6oz (150g) Self Raising Flour
8oz (200g) Caster Sugar
8oz (200g) Butter, Softened
2oz (50g) Cocoa Powder
4 Eggs

Method:
Pre-heat your oven to 180 degrees Celsius. Line and grease two 8-inch cake tins.
Beat together the butter and sugar until light, creamy and fluffy.
Add the eggs gradually, adding a tbsp of flour at the same time to prevent the mix from curdling.
Next, add in the rest of the flour and the cocoa powder and beat the batter well until all the ingredients are combined.
Spoon your mixture into the prepared tins one at a time until all the batter has been used up. Smooth out the tops with either a round bladed knife or palette knife.
Bake in a preheated oven for 22-25 minutes or until it is firm to the touch or a skewer inserted into the middle comes out clean.
Leave to cool for a few minutes and then remove from cake tins onto a cooling wire to cool completely.

Next up is the fun part of filling your sponges! (this is probably my favourite part).

Ingredients:
100g Chocolate (either dark or milk)
200g Butter, Softened
400g Icing Sugar
4tbsp Cocoa Powder
2tbsp Milk

Method:
Melt the chocolate in a bowl over the top of a pan of lightly boiling water. Make sure the water doesn't touch the bowl, otherwise your chocolate could burn. Stir occasionally. Alternatively, melt your chocolate in a microwave, stirring every 20 seconds. Leave to cool.
Meanwhile, beat together the butter and icing sugar until a buttercream is formed. This should look similar to the process in the recipe above, the only difference being you're using icing sugar instead of caster. Next, add in the cocoa powder and milk and give it a good beat until it's fully combined. Then add in your melted chocolate, and once again, beat thoroughly until all the ingredients are combined.

To assemble your cake, pop one of the sponges (pick the one which doesn't look as pretty) onto either a cake board or plate-basically whatever you're going to serve it on. Then spread the icing over the top of the sponge and smooth it out so it creates a level surface. Simply put the other sponge onto the top and voila. Your cake is assembled! You can sprinkle some icing sugar over the top if you like or just leave it as it is, either way will look delicious!
