Bake Off Biscuits
The Great British Bake Off is back again tonight, and this weeks episode enters the world of biscuits; it's going to be a good night! There will no doubt be many snaps, cracks and crunches as the remaining 11 bakers battle it out to bake the best biscuit build and impress Mary and Paul.
So in honour of biscuit week I thought I'd share 3 of my favourite biscuit recipes, each distinctively different, yet each incredibly tasty.
Double Chocolate Cookies
So I love chocolate, like a stupid amount. It's my weakness.
And if you follow my blog, you'll know I've posted this recipe before on here, but it's just so darn good!
Every time, the cookies come out crunchy on the outside and soft on the inside, with molten chunks of chocolate running through. Does it really get any better?
Of course, you can replace the chocolate chips with whatever other filling you like, and you can replace the cocoa powder with flour if you'd rather have a vanilla biscuit base. They're so versatile!
So here is the recipe, it is sure to go down a treat at home!
Gingerbread
Gingerbread is one of those things that remind me of Christmas. I always make a Gingerbread house which I never really want to eat because it means destroying all my hard work! But it has to be done, it's so moreish.
The recipe I use for this sweet treat comes from the queen of baking herself: Mary Berry. You can find it in a lot of GBBO books, and in her baking books too.

There's nothing better than the smell of gingerbread cooking, it's hard to be patient enough to wait until it is cool enough to eat! But when you do, it makes your day so much better.
Shortbread
Shortbread is one of those British classics that you can never go wrong with. It's always a crowd pleaser, and goes perfectly with a cuppa on a dark winter's night!
You can add chocolate chips if you like, add cocoa powder or add dried fruit, its really up to you. But I find that the classic vanilla shortbread hits the spot perfectly.
I have two recipes on my blog; one for Scottish Shortbread which is a family recipe of mine, and the other is a slightly less sweet recipe, which comes straight from my childhood.
Take your pick and get your bake on!
