Bacon & Cheese Quiche-Summer Sizzlers 3

How is everyone's weeks treating them? Good I hope!

Welcome to my third post in my summer sizzler series, I hope you've liked my past two recipes (if you haven't read them yet then go right ahead, I dare you!)

So today's recipe is for a bacon and cheese quiche, perfect for those warm summer days where you just don't want to eat a lot because its so warm!

Obviously you don't have to choose bacon as your filling, you can do another meat or make it completely vegetarian, its up to you! I'll leave some optional filling ideas for you guys too, the possibilities really are endless!

Anyways, here is the scrummy recipe!

Ingredients:
10 rashers of smoked bacon, cooked and then cut into chunks.
250g cheese, grated.
325ml milk.
3 medium/large eggs.
Salt and pepper to season

Method:
Pre-heat oven to 200C.
Make your pastry and leave to chill in the fridge until you've prepared the rest of the ingredients.
Cook the bacon and chop it into small chunks, set to one side to cool.
Grate the cheese, and again set it to one side, you'll be needing this last.
Beat together the eggs and milk, until fully combined and add a tsp of pepper and salt.
Line a lightly greased 9inch quiche tin and roll out your pastry. Pop the pastry into the tin, and press it to the sides, ensuring there are no air bubbles. Trim the edges, leaving a slight overlap and line the case with parchment paper and fill with baking beans (or some pudding rice), chill for 10minutes then bake blind for 12-15minutes.
*You can use a cupcake or Yorkshire pudding tin, or just a large flan dish, which ever takes your fancy really.
(Note: if using a Yorkshire pudding tin, ensure you have a scone cutter the right size, so the pastry fits comfortably into the tin).*
Oce out the oven, leave the pastry case to cool for 5-10 minutes, this will prevent the egg mix from curdling.
Trim the edges again once baked, and remove the baking beans.
Sprinkle the bacon over the pastry base and pour in the egg mix. Sprinkle your grated cheese on top and back for 30-40 minutes, or until the pastry is golden brown.
